So soft and moist Roll Cake

This is a real food!

You'll need........
3 eggs
60g flour
60g sugar
30ml vegetable oil
45ml milk
cream and icing sugar
jam, nutella, ect.........

1. In a small bowl, combine egg whites and a half of the sugar and beat till firm peak.
2. Preheat oven at 160 degrees. In a large bowl, combine remaining sugar, egg yolks, oil and milk, mix well till creamy.
3 Sift in the flour to the large bowl and mix together. Add 1/3 of the merange, and mix well. You can use the same whisk up to this point. Add the remaining merange and mix together using a spatula.
4. Line a cooking sheet on a 23 x 33cm pan, pour the mixture and spread evenly. Bake in the oven for 15 minutes.
5. Take out the cake from the pan and rest on a newspaper with another piece of cooking sheet on top, so it won't dry out. While it's cooling down, beat the cream and icing sugar and make a rather firm cream filling. Don't make it too sweet if you're using jam also.
6. Take off the top sheet, spread the jam thinly, leaving the ending bit. Then spread the cream over leaving the ending bit again. Slowly roll the cake away from you. Wrap the cake using the same sheet, and then plastic wrap, and rest in the fridge for a few hours.

It's a real treat. Kids love it!

kids Tiramisu

Super creamy and tasty, non liqueur

For 8 to 10 people or 20cm square container

You need.....
1 packet of Milk Coffee Biscuit (Coles brand OK)
3 Tablespoons instant coffee powder and 150ml hot water
300ml cream
250ml mascarpone cheese
130g icing sugar
cocoa powder to garnish

1. In a shallow bowl, mix coffee powder and hot water, set aside.
2. In a medium sized bowl, put cream and icing sugar and beat till medium peak. Than add in mascarpone cheese and mix well with spatula.
3. Dip biscuits in the coffee and place in the container, one by one, to make a layer. Using a spoon, pour more coffee over the biscuits. This will make the biscuits very moist and soft. Top with a layer of cream (use 1/3 of the cream). Repeat the process, make 3 layers.
4. Dust with cocoa powder. Cover with wrap and rest in the fridge for 4 hours.

This is my best ever Tiramisu like cake. Please try it!

strawberry cupcake

Very light, not too sweet cupcake.
Warning, this is a real food!

You need.....
100g self raising flour
4 eggs
20g sugar
4 table spoon vegetable oil
4 table spoon water
a dash of vanilla
1 punnet of strawberries
200ml cream and 20g sugar
1 teaspoon icing sugar

1. Separate eggs. Put egg whites in a bowl and beat until they form stiff peaks.
2. In a large bowl, beat the egg yolks and sugar until light in color and thick consistency. Add oil and mix well. Add water and vanilla and mix well.
3. Sift in flour into the egg yolk mixture, and mix well with spatula.
4. Add half of egg whites and mix well. Gently fold in the rest of egg whites.
5. Spoon the mixture into the paper cups (makes 10 cupcakes), and bake in the oven 180c for about 15 minutes or until they are baked through.
6. Beat the cream and sugar until stiff. Take 5 good looking strawberries, cut in half, and put aside for decoration. Chop the rest of strawberries and mix with icing sugar.
7. When the cupcakes are cool, slice in half horizontally to make 2 layers. Place whipped cream and chopped strawberries on the bottom layer, put on top layer, cover with more cream and top with a half strawberry.

easy custard pudding

No bake, easy custard pudding
This is a real food, not fake!

You need.....
2 eggs
300ml milk
200ml cream
60g sugar
a dash of vanilla
10g gelatine powder & 4 tablespoons water

1. Dissolve gelatine powder in the water. Beat eggs in a bowl.
2. Put milk, cream, sugar and vanilla in a sauce pan, stir on medium heat till sugar dissolves. Pour in the beaten eggs and keep stirring till steam comes up.
3. Off the heat, dissolve the gelatine. Strain the mixture into a bowl using a fine sieve. You can use ice water to cool it down, or just leave it till cool, but you have to stir really well before you put it in the fridge, otherwise it will be 2 layered pudding..
4. When it's cooled down, rest in the fridge for 2 hours or more.

Caramel sauce
You need.....
200g sugar
50ml water
100ml boiling water

1. Put sugar and water in a sauce pan, cook on high heat till really really brown.
2. Off the heat, bring the pan into the sink, cover up with the lid leaving a little opening, and slowly pour in the boiling water. Be careful, it splashes, and it's super hot.
3. Quickly stir with spatula, pour in the glass jar when it's cool. You can keep in the fridge for a few months.

When the pudding is set, scoop out into the serving bowl, and pour the caramel sauce over.
